When Holbrook’s Wharf and Grille and the General Store in Harpswell open for the season on Saturday, May 26, it will be under new management.

Ashley Griset and John Profenno both help manage the food service operations at Southern Maine Community College in South Portland, and now the pair are in charge of these popular Harpswell establishments.

“We are extremely pleased to welcome Ashley and John as managers of Holbrook’s Whart and Grille and the General Store,” said Greg Barmore, chairman of the Holbrook Community Foundation board. “We appreciate their multi-year commitment to its success.”

Griset is the general manager of the food service operations at SMCC, while Profenno is the executive chef. They are responsible for a 45-person team which operates the college’s dining room. The team also runs the Seawolves Café on the South Portland campus and the Landing Café on the Brunswick campus.

Griset and Profenno also manage a catering business for corporate events, weddings and other private functions.

Griset has years of restaurant experience at all levels from dishwasher to manager. She worked in Freeport at a high-volume brewery and at a large university in Massachusetts.

Griset said she’s ready to come back to Harpswell.

“My family has been in Harpswell since the 1930’s I grew up spending summers on Stover’s Point and remember coming to Holbrook’s as a kid for lobster rolls and fried clams,” she said.

She said she’s combining her two passions: preparing fabulous food and carrying on the Holbrook’s tradition in Cundy’s Harbor.

Profenno graduated from SMCC’s culinary arts program and has more than 30 years of experience as a chef in Cape Elizabeth, Falmouth, South Portland and Scarborough.

At the wharf, Griset and Profenno are planning a classic Maine outdoor dining experience that will feature locally-sourced and freshly prepared ingredients. At the General Store, the duo plans to replicate the vintage look of a coastal country store.

The store will be fully stocked to meet the needs of fishermen, residents, cruisers and tourists. Griset and Profenno plan to practice sustainability with recycling and composting.

The Wharf and Grille and General Store will be open Tuesday through Sunday from 11 a.m. to 8 p.m.
